These Easy Cranberry Brie Bites are a quick and impressive appetizer made with flaky puff pastry, creamy brie, and tart cranberry sauce. Ready in just 30 minutes, they’re perfect for weeknight entertaining or holiday gatherings.

Ingredients

Scale
  • 1 sheet frozen puff pastry, thawed for about 20 minutes
  • 4 ounces brie cheese, rind removed and cut into 24 small cubes (about 1/2 inch each)
  • 1/2 cup whole berry cranberry sauce
  • 1 large egg, beaten with 1 tablespoon water (for egg wash)
  • Flaky sea salt, for sprinkling
  • Fresh rosemary or thyme sprigs (optional garnish)
  • Honey for drizzling (optional)
  • Chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare the puff pastry: Let frozen puff pastry sit at room temperature for exactly 20 minutes. Unfold on a lightly floured surface and cut into 24 equal squares (about 1.5 inches each).
  3. Press the squares into the pan: Gently press each pastry square into the cups of a mini muffin tin or place on the lined baking sheet about 1 inch apart. If using a baking sheet, gently press the center of each square down to create a well.
  4. Add the fillings: Spoon about 1/2 teaspoon of cranberry sauce into the center of each pastry square. Place one cube of brie on top of the cranberry sauce.
  5. Brush with egg wash: In a small bowl, whisk together the egg and water. Using a pastry brush, gently brush the edges of each pastry square with the egg wash, being careful not to get it on the brie.
  6. Bake: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the pastry is golden brown and puffed and the brie is melted and bubbly.
  7. Cool and serve: Let the bites cool on the baking sheet for 5 minutes. Transfer to a serving platter and sprinkle with flaky sea salt and any garnishes you like.

Notes

Keep the pastry cold for best flakiness. Don’t overfill the bites. Use a mini muffin tin if available to hold the brie in place. Watch the oven closely as puff pastry can burn quickly. Assemble up to 4 hours ahead and refrigerate; add 2-3 minutes to baking time if cold.
