These quick cranberry brie puff pastry bites with hot honey are fast, forgiving, and taste like you spent way more effort than you actually did. Perfect for weeknights or last-minute entertaining, they combine flaky pastry, melted brie, tart cranberries, and a sweet-spicy honey drizzle.

Ingredients

Scale
  • 1 sheet (about 8–9 ounces) frozen puff pastry, thawed
  • 4 ounces brie cheese, rind on, cut into 16 small cubes
  • 1/3 cup whole berry cranberry sauce
  • 3 tablespoons hot honey
  • 1 large egg, beaten (for egg wash)
  • Flaky sea salt, for finishing (optional)
  • Fresh thyme or rosemary for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Lightly flour your work surface and unfold the thawed puff pastry sheet. Cut the pastry into 16 equal squares.
  3. Place the pastry squares on the prepared baking sheet, spacing them about 1 inch apart.
  4. Top each square with a small cube of brie (about 1/4 ounce each). Press the cheese gently into the center of the pastry.
  5. Spoon about 1 teaspoon of cranberry sauce on top of each brie cube.
  6. Fold the corners of each pastry square inward, just slightly, to create a little nest.
  7. Brush the exposed pastry edges with the beaten egg wash.
  8. Bake for 14 to 16 minutes, or until the pastry is puffed and deep golden brown.
  9. Remove from the oven and let cool on the baking sheet for 2 minutes.
  10. Drizzle generously with hot honey while still warm. Use about 1 1/2 tablespoons for the first drizzle, then sprinkle with flaky sea salt if using. Let cool for another 2 to 3 minutes, then drizzle with the remaining hot honey. Garnish with fresh thyme or rosemary if desired.
  11. Serve warm.

Notes

Keep everything cold for best puff pastry results. Don’t overfill the pastry. Add hot honey after baking to prevent burning. Best served within 15 minutes of baking. To prep ahead, assemble bites on baking sheet and refrigerate up to 4 hours before baking, adding a few extra minutes to bake time.
