Ingredients

Scale
  • 1 pound ground beef (or ground turkey)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (15-ounce) can corn, drained
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (10-ounce) can Rotel (diced tomatoes with green chilies)
  • 1 (8-ounce) can tomato sauce
  • 1 (4-ounce) can diced green chilies (optional)
  • 1 packet (1 ounce) taco seasoning
  • 1 packet (1 ounce) ranch dressing mix
  • 2 cups beef broth (or chicken broth)
  • Shredded cheddar cheese (for topping)
  • Sour cream (for topping)
  • Tortilla chips (for serving)
  • Fresh cilantro, chopped (for topping)
  • Diced avocado (for topping)
  • Lime wedges (for serving)

Instructions

  1. Brown the ground beef: Place a large skillet over medium-high heat. Add the ground beef and diced onion. Cook, breaking the meat apart with a wooden spoon, until the beef is browned and the onion is translucent (about 6-8 minutes). Drain excess fat if needed. Add minced garlic and cook for one more minute until fragrant.
  2. Transfer to the slow cooker: Dump the browned beef and onion mixture into a 6-quart (or larger) slow cooker.
  3. Add the canned goods: Add the drained black beans, kidney beans, corn, diced tomatoes (with juices), Rotel (undrained), tomato sauce, and diced green chilies. Stir gently.
  4. Season it up: Sprinkle the taco seasoning and ranch dressing mix over the top. Pour in the beef broth. Stir well to combine, ensuring the seasoning packets are fully dissolved.
  5. Cook low and slow: Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  6. Check the consistency (optional): About 30 minutes before serving, stir the soup. If too thick, add 1/2 cup more broth or water. If too thin, cook uncovered for 20-30 minutes.
  7. Taste and adjust: Before serving, taste and adjust seasoning. Add a squeeze of fresh lime juice if desired.
  8. Serve with toppings: Ladle into bowls and set out toppings like shredded cheese, sour cream, tortilla chips, cilantro, avocado, and lime wedges.

Notes

For best flavor, brown the meat first. Drain all canned beans and corn to avoid watery soup. The ranch seasoning is the secret ingredient—don’t skip it. Soup freezes well for up to 3 months. For a vegetarian version, skip the beef and add extra beans.
