These healthy breakfast egg muffins are perfect for meal prep. Made with simple ingredients like eggs, cheese, and vegetables, they’re quick to make, reheat in seconds, and are endlessly adaptable for a delicious grab-and-go breakfast.

Ingredients

Scale
  • 6 large eggs (room temperature helps them whip up fluffier)
  • ¼ cup milk (whole milk for richness, but any milk works)
  • ½ cup shredded cheddar cheese (sharp cheddar recommended)
  • ½ cup diced bell pepper (any color works)
  • ¼ cup diced onion (yellow or white)
  • ¼ cup chopped spinach (frozen works, squeeze out extra water)
  • ¼ teaspoon salt (fine sea salt)
  • ¼ teaspoon black pepper (freshly ground preferred)
  • ¼ teaspoon garlic powder (optional but recommended)
  • Non-stick cooking spray (or butter to grease the pan)

Instructions

  1. Preheat your oven to 375°F (190°C). Give it a full 10 minutes to come to temperature.
  2. Grease your muffin tin generously. Spray each cup with non-stick spray, then wipe a little butter around the edges with a paper towel.
  3. Dice your vegetables into pea-sized pieces. Big chunks won’t cook through and will make the muffins fall apart.
  4. Crack the eggs into a large bowl. Check for shell bits.
  5. Add the milk, salt, pepper, and garlic powder. Whisk vigorously for about 30 seconds until the mixture is uniform and slightly frothy on top.
  6. Stir in the shredded cheese and diced vegetables. Fold gently until everything is evenly distributed. Don’t overmix.
  7. Pour the mixture into the prepared muffin cups. Fill each cup about ¾ full. Use a ¼-cup measuring scoop for even portions.
  8. Bake for 18–22 minutes. At 18 minutes, check them. The edges should be golden brown and the centers should be set—not jiggly. A toothpick inserted in the center should come out clean.
  9. Let them cool in the pan for 5 minutes. This is crucial. After 5 minutes, run a butter knife around the edge and lift them out.
  10. Transfer to a cooling rack. Let them cool completely before storing.

Notes

Don’t skip the milk—it adds moisture and creates a softer texture. Cook watery veggies like mushrooms or zucchini first to prevent sogginess. Let muffins cool completely before refrigerating to avoid trapped steam. This recipe doubles beautifully and freezes well for up to 3 months.
