  • 1 packet active dry yeast (about 2¼ teaspoons)
  • 1 tablespoon brown sugar
  • 4 cups all-purpose flour
  • 2 teaspoons fine sea salt

  • ½ cup baking soda
  • 10 cups water
  • 1 tablespoon brown sugar (optional, for deeper color)
  • 1 large egg, beaten with 1 tablespoon water (egg wash)
  • Coarse sea salt (pretzel salt or kosher salt)
  • 2 tablespoons melted butter (for brushing after baking)
  • 2 tablespoons unsalted butter (for cheese dip)
  • 2 tablespoons all-purpose flour (for cheese dip)
  • 1 cup whole milk (or half-and-half)
  • ½ cup beer (lager or pilsner)
  • 2 cups sharp cheddar cheese, freshly grated
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • Pinch of cayenne pepper (optional)
  • Salt and pepper to taste

Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water (110°F-115°F), brown sugar, and active dry yeast. Stir gently and let sit for 5-10 minutes until foamy.
  2. Make the dough: Add melted butter, salt, and 2 cups of flour to the yeast mixture. Stir until combined. Gradually add remaining flour, ½ cup at a time, until dough comes together (slightly sticky but manageable).
  3. Knead the dough: Turn onto a lightly floured surface and knead for 6-8 minutes until smooth and elastic. (If using stand mixer with dough hook, knead on medium speed for 4-5 minutes.)
  4. First rise: Place dough in a greased bowl, cover, and let rise in a warm spot for 45-60 minutes until doubled in size.
  5. Shape the bites: Punch down dough and divide into 4 equal pieces. Roll each into a 1-inch thick rope, then cut into 1-inch pieces (about 40-50 total).
  6. Prepare the baking soda bath: In a large pot, bring 10 cups of water to a boil. Carefully add ½ cup baking soda (it will bubble up) and optional brown sugar. Reduce heat to a gentle simmer.
  7. Bathe the bites: Working in batches of 8-10, drop pretzel bites into simmering water for 30 seconds. Use a slotted spoon to push down if they float. Remove and place on parchment-lined baking sheet, spacing 1 inch apart.
  8. Egg wash and salt: Brush each bite with beaten egg wash. Sprinkle generously with coarse salt.
  9. Bake: Preheat oven to 425°F. Bake for 12-15 minutes until deep golden brown, rotating pan halfway through.
  10. Finish with butter: As soon as they come out of the oven, brush hot pretzel bites with melted butter.
  11. Make the beer cheese dip: While pretzels bake, melt 2 tablespoons butter in a small saucepan over medium heat. Whisk in 2 tablespoons flour and cook for 1 minute. Slowly pour in milk and beer, whisking constantly. Cook until thickened (3-4 minutes). Reduce heat to low, add grated cheese, mustard, garlic powder, and cayenne. Stir until smooth and melted. Season with salt and pepper.

Notes

The baking soda bath is essential for the signature pretzel crust. Don’t overboil (30 seconds is perfect). Keep the bath at a gentle simmer. Work quickly when adding baking soda to water. Use room temperature ingredients for best yeast activity. For extra flavor, toast the flour at 350°F for 10 minutes before using. Don’t overcrowd the baking sheet. Leftover pretzel bites can be stored at room temperature for up to 2 days and reheated in a 350°F oven for 5 minutes. Freeze baked bites for up to 3 months.
