  • ½ cup (115g) unsalted butter, cold and cubed
  • ¼ cup (50g) granulated sugar
  • ½ teaspoon salt
  • 3 large eggs, room temperature
  • ½ cup (120ml) pure maple syrup (Grade A amber recommended)
  • ¼ cup (60ml) bourbon
  • ½ cup (115g) unsalted butter, melted
  • 1 teaspoon pure vanilla extract
  • 1 ¼ cups (150g) pecans, roughly chopped and toasted
  • ½ cup (100g) packed light brown sugar
  • ¼ cup (60ml) heavy cream
  • 2 tablespoons unsalted butter
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). In a medium bowl, combine flour, sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs. Press firmly into bottom of greased 9×9-inch pan. Bake 15 minutes until lightly golden. Let cool slightly.
  2. In a large bowl, whisk eggs, maple syrup, bourbon, melted butter, and vanilla extract until smooth. Stir in chopped pecans.
  3. Pour filling evenly over pre-baked crust. Spread gently to cover edges. Bake 25-30 minutes until filling is mostly set but slightly jiggly in center. A toothpick should come out with a few moist crumbs.
  4. While bars bake, combine brown sugar, heavy cream, butter, and salt in small saucepan over medium heat. Stir constantly until sugar dissolves and mixture thickens, about 4-5 minutes. Remove from heat and cool slightly.
  5. Immediately pour warm caramel over bars when removed from oven. Spread gently if needed. Return pan to oven for 5 minutes to set caramel. Transfer to cooling rack and cool completely, preferably 2 hours or overnight.
  6. Cut into squares using a sharp knife dipped in hot water and wiped dry between cuts. Serve at room temperature or slightly chilled.
