These Easy Maple Glazed Delicata Squash Rings are a quick and delicious side dish, featuring caramelized edges and a tender bite. Made with simple ingredients, they’re perfect for busy weeknights and are a guaranteed crowd-pleaser.

Ingredients

Scale
  • 2 medium delicata squash (about 2 lbs total)
  • 3 tablespoons pure maple syrup (Grade A Dark Amber recommended)
  • 2 tablespoons olive oil
  • ½ teaspoon fine sea salt, plus more to taste
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon cinnamon (optional but recommended)
  • 1 tablespoon fresh thyme or rosemary, chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Give it a full 15 minutes to come to temperature.
  2. Wash the delicata squash thoroughly under running water. Pat them dry with a clean kitchen towel. Using your sharp knife, trim off both ends of each squash—just about ¼ inch from each end. You don’t need to peel delicata squash; the skin is thin and becomes tender when roasted.
  3. Cut the squash crosswise into ½-inch thick rings. Use your fingers to scoop out the seeds from each ring.
  4. In a small bowl, whisk together the maple syrup, olive oil, salt, pepper, and cinnamon (if using) until well combined.
  5. Line your baking sheet with parchment paper or a silicone mat. Place the squash rings in a single layer on the sheet, leaving space between each ring.
  6. Using a pastry brush or a spoon, brush or drizzle the maple mixture over the rings. Flip each ring gently, then glaze the other side. Make sure every ring gets an even coating.
  7. Roast for 15 minutes on the middle rack of the preheated oven.
  8. Carefully remove the sheet from the oven. Using tongs or a spatula, flip each ring over. Return the sheet to the oven and roast for another 10-15 minutes, until the rings are tender and the edges are caramelized and slightly crispy.
  9. If using fresh thyme or rosemary, sprinkle it over the rings as soon as they come out of the oven.
  10. Allow the rings to cool on the baking sheet for about 5 minutes before serving.

Notes

Don’t skip the parchment paper to prevent sticking. Watch the oven during the last 5 minutes to avoid burning. Use room temperature maple syrup for better blending. For a double batch, use two baking sheets on separate racks and swap positions halfway through.
