A quick and easy appetizer featuring cherry tomatoes, fresh mozzarella, and basil on mini skewers, drizzled with a homemade balsamic glaze. Perfect for parties and casual gatherings.

  • 8 ounces fresh mozzarella balls (bocconcini)
  • 20 fresh basil leaves, washed and patted dry
  • 2 tablespoons extra virgin olive oil
  • Salt and freshly ground black pepper, to taste
  • ½ cup balsamic vinegar (for glaze)
  • About 20 wooden toothpicks or small skewers

Instructions

  1. Make the Balsamic Glaze (10-15 minutes): Pour ½ cup (120 ml) of balsamic vinegar into a small saucepan over medium heat. Bring to a gentle boil, then reduce heat to low and simmer, stirring occasionally, until thickened and syrupy, about 10 minutes. Set aside to cool.
  2. Prepare the Ingredients (5 minutes): Rinse and dry cherry tomatoes and basil leaves. Drain and gently pat dry the mozzarella balls to remove excess moisture.
  3. Assemble the Skewers (10 minutes): Thread one cherry tomato, one basil leaf (folded if large), and one mozzarella ball onto each wooden toothpick or mini skewer. Repeat until all ingredients are used.
  4. Toss and Season (2 minutes): Place all mini skewers in a shallow dish. Drizzle with 2 tablespoons extra virgin olive oil. Lightly sprinkle with salt and freshly ground black pepper. Toss gently to coat without breaking skewers or bruising ingredients.
  5. Final Touch (1 minute): Drizzle the cooled balsamic glaze over the assembled skewers just before serving.

Notes

Drain and pat dry mozzarella to avoid excess moisture. Assemble skewers close to serving time to keep basil fresh. Balsamic glaze can be made ahead and stored refrigerated for up to two weeks. Store leftover skewers uncovered in the fridge for up to 24 hours without balsamic glaze to prevent sogginess.
