Easy One-Bowl Banana Bread: The Best No-Mixer Recipe

one bowl banana bread - featured image

This easy one-bowl banana bread is moist, tender, and requires no mixer. Perfect for busy weeknights, it comes together in under 10 minutes with simple pantry ingredients.

Ingredients

Scale
  • 3 large ripe bananas, mashed (about 1½ cups)
  • ⅓ cup (75g) unsalted butter, melted and slightly cooled
  • ¾ cup (150g) granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1½ cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup chocolate chips, chopped walnuts, or blueberries (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper or spray generously with non-stick spray.
  2. In a large mixing bowl, mash the bananas with a fork until smooth (a few small lumps are fine).
  3. Add the melted butter, granulated sugar, egg, and vanilla extract to the same bowl. Stir until well combined and smooth.
  4. Sprinkle the flour, baking soda, and salt over the wet mixture. Stir gently until just combined—do not overmix. If using mix-ins, fold them in at the end.
  5. Pour the batter into the prepared loaf pan and spread evenly. Optionally, sprinkle extra chocolate chips or coarse sugar on top.
  6. Bake for 50-60 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. If browning too quickly, tent with foil after 40 minutes.
  7. Cool in the pan for 10 minutes, then transfer to a cooling rack. Let cool completely before slicing for clean cuts, or serve warm.

Notes

For best results, use very ripe bananas with brown spots. Do not overmix the batter to avoid tough bread. Let the bread cool before slicing for clean cuts. The bread tastes even better the next day.
