Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray, or line it with parchment paper leaving some overhang on the long sides for easy removal.
  2. Mash the bananas in your large mixing bowl with a fork until mostly smooth with a few small lumps.
  3. Add the melted butter and sugar to the bananas. Stir with a fork until well combined and glossy.
  4. Add the egg and vanilla extract. Stir until fully incorporated and smooth.
  5. Sprinkle the flour, baking soda, salt, and cinnamon (if using) over the wet mixture. Stir gently until just combined; do not overmix.
  6. Pour the batter into the prepared loaf pan and spread evenly. Tap the pan gently on the counter to release air bubbles.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent with foil after 40 minutes.
  8. Cool in the pan for 10 minutes, then remove from the pan and cool completely on a cooling rack.
  9. While the bread cools, make the brown butter icing: In a small saucepan over medium heat, melt ¼ cup butter. Continue cooking, swirling occasionally, until it foams, then the foam subsides and golden brown specks appear (about 4-6 minutes). Remove from heat immediately when it smells nutty and turns amber.
  10. Let the brown butter cool for about 5 minutes, then whisk in sifted powdered sugar, 2 tablespoons milk, vanilla extract, and a pinch of salt until smooth. Add more milk if needed for desired consistency.
  11. Once the loaf is completely cool, pour the brown butter icing over the top, letting it drip down the sides. Let the icing set for about 15 minutes before slicing.
