This overnight cinnamon roll casserole is the perfect make-ahead breakfast for holidays and weekends. With a soft, custard-like center, crisp edges, and a creamy cream cheese drizzle, it’s a crowd-pleaser that requires just 15 minutes of prep.

Ingredients

Scale
  • 2 cans (12.4 oz each) refrigerated cinnamon rolls
  • 4 large eggs, room temperature
  • ½ cup heavy cream
  • ¼ cup whole milk
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 4 oz cream cheese, softened
  • ¼ cup unsalted butter, softened
  • 1 cup powdered sugar, sifted
  • ½ teaspoon vanilla extract
  • 2–3 tablespoons milk
  • ½ cup chopped pecans or walnuts (optional)
  • ¼ cup raisins or dried cranberries (optional)
  • 1 apple, peeled and diced (optional)

Instructions

  1. Open both cans of cinnamon rolls and set aside the included icing packets. Cut each cinnamon roll into 6 pieces. Place the pieces in an even layer in a greased 9×13-inch baking dish.
  2. In a large mixing bowl, whisk together eggs, heavy cream, whole milk, granulated sugar, vanilla extract, ground cinnamon, and salt until smooth and slightly frothy. Pour the custard evenly over the cinnamon roll pieces, pressing down gently to coat.
  3. If using nuts, raisins, or diced apple, sprinkle them evenly over the top. Cover tightly with plastic wrap or aluminum foil and refrigerate for at least 8 hours, up to 24 hours.
  4. When ready to bake, preheat oven to 350°F (175°C). Remove the dish from the fridge and let it sit on the counter for 10 minutes. Bake uncovered for 35-40 minutes, until the top is golden brown and the center is set but slightly jiggly. A knife inserted into the center should come out clean.
  5. While the casserole bakes, make the cream cheese drizzle: In a medium bowl, beat softened cream cheese and butter until smooth. Add powdered sugar and vanilla extract, then beat again. Gradually add milk, one tablespoon at a time, until desired consistency is reached.
  6. Remove the casserole from the oven and let it cool for 5 minutes. Drizzle the cream cheese mixture generously over the top, then drizzle the reserved icing packets from the cinnamon roll cans. Serve warm.

Notes

Don’t skip the overnight soak—it allows the cinnamon rolls to absorb the custard for a tender texture. Use room temperature ingredients for best results. Let the casserole rest for 5-10 minutes before serving to allow the custard to set. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days and taste even better the next day.
