  • 1 medium fresh kiwi, peeled and sliced

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking sheet with parchment paper.
  2. Lightly flour your work surface and rolling pin. Roll the sugar cookie dough into a roughly 12-inch circle about 1/4 inch thick.
  3. Transfer the dough to the baking sheet. Patch any cracks with extra dough. Chill the dough on the sheet in the fridge for 10 minutes.
  4. Bake the sugar cookie crust for 15–18 minutes until edges are lightly golden but center is still soft.
  5. Cool the crust completely on a wire rack for about 30 minutes.
  6. In a mixing bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and fluffy.
  7. Spread the cream cheese mixture evenly over the cooled cookie crust, leaving a small border around the edge.
  8. Arrange the fruit decoratively in stripes or patterns: strawberries for red, blueberries for blue, and kiwi or raspberries for white/green contrast.
  9. Chill the assembled fruit pizza in the refrigerator for at least 1 hour to let flavors meld and topping set.
  10. Slice into wedges with a sharp knife and serve. Have napkins handy for any juice from the fruit.
