Instructions

  1. Mix dry ingredients: sift together 2 ¾ cups all-purpose flour, 1 teaspoon baking soda, ½ teaspoon baking powder, and ¼ teaspoon salt in a medium bowl. Set aside.
  2. Cream butter and sugar: beat 1 cup softened unsalted butter with 1 ½ cups granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add egg and vanilla: beat in 1 large room temperature egg and 1 teaspoon vanilla extract until fully combined.
  4. Combine wet and dry: gradually add dry ingredients to butter mixture, mixing on low speed just until incorporated. Avoid overmixing.
  5. Chill dough: wrap dough in plastic wrap and chill for at least 1 hour or overnight.
  6. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
