Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup buttermilk (room temperature)
  • ½ cup vegetable oil
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • ½ cup hot coffee (or hot water)
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil
  • ½ cup unsalted butter (softened)
  • 2 cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • Orange and red candy melts (or M&Ms in fall colors)
  • Candy eyes
  • Orange sprinkles or small orange candies

Instructions

  1. Make the chocolate feathers: Place chocolate chips and coconut oil in a small microwave-safe bowl. Microwave in 30-second intervals, stirring after each, until completely smooth (about 90 seconds total). Pour into a piping bag or zip-top bag and snip a tiny corner off. Line a baking sheet with parchment paper. Pipe small teardrop shapes (about 1½ inches long) onto the parchment, adding a few lines for feather veins. Make 24-30 feathers. Refrigerate for at least 15 minutes until hard.
  2. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners. Spray liners with non-stick cooking spray.
  3. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt until no lumps remain.
  4. Make a well in the center of the dry ingredients. Add buttermilk, vegetable oil, eggs, and vanilla extract. Stir with a rubber spatula until just combined. Pour in hot coffee and stir gently until batter is smooth and thin.
  5. Divide batter evenly among 12 cupcake liners, filling each about ⅔ full. Bake for 15-18 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
  6. Make the frosting: Beat softened butter with an electric mixer until creamy (about 2 minutes). Gradually add powdered sugar, one cup at a time, beating on low speed. Add milk and vanilla extract, then beat on medium-high speed for 2-3 minutes until light and fluffy.
  7. Assemble the turkeys: Spread frosting on cooled cupcakes. Gently peel chocolate feathers off parchment and insert 2-3 feathers into the back of each cupcake, angling outward. Use a small dot of frosting to attach candy eyes, an orange sprinkle for the beak, and a red candy melt for the wattle.

Notes

Don’t skip the coffee—it enhances chocolate flavor without tasting like coffee. Room temperature ingredients mix better. Make extra chocolate feathers as some may break. Work quickly with melted chocolate as it sets fast. Use a toothpick to create realistic feather veins. Cool cupcakes completely before frosting to prevent melting. Store at room temperature for up to 3 days; do not refrigerate.
