Ingredients

Scale
  • 1 pound ground beef (or ground turkey)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can corn, drained
  • 1 (15-ounce) can diced tomatoes (fire-roasted preferred)
  • 1 (15-ounce) can tomato sauce
  • 1 (4-ounce) can diced green chiles
  • 1 cup beef broth (low-sodium preferred)
  • 1 packet (1 ounce) ranch seasoning mix
  • 1 packet (1 ounce) taco seasoning mix
  • Shredded cheddar cheese (for serving)
  • Sour cream (for serving)
  • Fresh cilantro, chopped (for serving)
  • Tortilla chips (for serving)
  • Avocado, diced (for serving)
  • Lime wedges (for serving)

Instructions

  1. Brown the Ground Beef: Place a large skillet over medium-high heat. Add the ground beef and diced onion. Cook for about 6-8 minutes, breaking the meat up with a wooden spoon, until the beef is no longer pink and the onions are soft and translucent. Drain excess fat if needed.
  2. Add the Garlic: Stir in the minced garlic and cook for another minute until fragrant.
  3. Transfer to the Slow Cooker: Spoon the cooked beef and onion mixture into a 6-quart slow cooker.
  4. Add the Canned Goods: Add the drained black beans, drained corn, diced tomatoes (with juices), tomato sauce, and diced green chiles. Stir to combine.
  5. Add the Seasonings and Broth: Sprinkle the ranch seasoning mix and taco seasoning mix over the top. Pour in the beef broth. Stir until the seasonings are fully dissolved and the soup is uniform.
  6. Set It and Forget It: Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours.
  7. Check and Adjust: About 30 minutes before serving, taste the soup and adjust seasoning if needed. Add a squeeze of fresh lime juice if desired.
  8. Serve and Enjoy: Ladle the soup into bowls and serve with desired toppings such as shredded cheese, sour cream, cilantro, tortilla chips, avocado, and lime wedges.

Notes

For a creamier version, stir in 4 ounces of cream cheese or 1/2 cup of heavy cream during the last 30 minutes of cooking. The soup thickens as it sits; add extra broth or water to adjust consistency. Leftovers taste even better the next day. To freeze, cool completely and store in freezer-safe containers for up to 3 months.
