Easy Spiced Pumpkin Dump Cake with Pecan Streusel

This incredibly easy dump cake features a creamy pumpkin custard layer topped with a crunchy, buttery pecan streusel. It’s the perfect fall dessert for potlucks, Thanksgiving, or any cozy gathering.

  • 1 can (15 oz) pumpkin puree
  • 1 can (12 oz) evaporated milk
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 box (15.25 oz) yellow cake mix
  • 1/2 cup unsalted butter, melted
  • 1 cup chopped pecans
  • 1/4 cup brown sugar, packed

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a large mixing bowl, whisk together the pumpkin puree, evaporated milk, granulated sugar, eggs, pumpkin pie spice, vanilla extract, and salt until smooth and well combined.
  3. Pour the pumpkin mixture into the prepared baking dish and spread evenly.
  4. In a medium bowl, combine the dry cake mix, melted butter, chopped pecans, and brown sugar. Stir with a fork until crumbly and clumpy.
  5. Sprinkle the streusel evenly over the pumpkin layer. Do not press down.
  6. Bake for 45-50 minutes, until the topping is golden brown and the pumpkin layer is set but slightly jiggly in the center. A toothpick inserted into the pumpkin layer should come out mostly clean.
  7. Let the cake cool for at least 20 minutes before serving.

Notes

Toast pecans before chopping for deeper flavor. Do not open the oven door for the first 30 minutes of baking. Let the cake cool at least 20 minutes before cutting to allow the pumpkin layer to set.
