Easy Sticky Honey Garlic Chicken Thighs

This slow cooker version of sticky honey garlic chicken thighs is tender, juicy, and coated in a glossy sweet-savory glaze. With just 10 minutes of prep, it’s the perfect set-it-and-forget-it weeknight dinner.

  • 2 lbs (900g) boneless, skinless chicken thighs
  • 1/2 cup (170g) honey
  • 1/3 cup (80ml) low-sodium soy sauce
  • 6 cloves garlic, minced
  • 2 tablespoons (30g) ketchup
  • 1 tablespoon (15ml) rice vinegar
  • 1 teaspoon (5ml) sesame oil (optional)
  • 2 tablespoons (16g) cornstarch
  • 2 tablespoons cold water
  • 34 green onions, sliced
  • 1 tablespoon sesame seeds (for garnish)

Instructions

  1. In a small mixing bowl, whisk together the honey, low-sodium soy sauce, minced garlic, ketchup, rice vinegar, and sesame oil (if using).
  2. Place the boneless, skinless chicken thighs in the bottom of your crockpot in a single layer.
  3. Pour the honey garlic mixture evenly over the chicken thighs.
  4. Cover and cook on LOW for 4-5 hours, or on HIGH for 2-3 hours, until the chicken is fork-tender.
  5. Using tongs, carefully transfer the cooked chicken thighs to a plate or cutting board. Tent loosely with foil to keep warm.
  6. Pour the remaining liquid from the crockpot into a small saucepan. In a separate small bowl, whisk together the cornstarch and 2 tablespoons of cold water to make a slurry.
  7. Bring the sauce to a simmer over medium heat, then whisk in the cornstarch slurry. Cook for 2-3 minutes, stirring constantly, until the sauce thickens to a glossy, syrupy consistency.
  8. Return the chicken thighs to the crockpot (or place them in a serving dish) and pour the thickened sauce over the top. Toss gently to coat.
  9. Sprinkle with sliced green onions and sesame seeds. Serve immediately over steamed rice.

Notes

For extra sticky, caramelized edges, broil the glazed chicken thighs in the oven for 2-3 minutes after step 8. Double the sauce ingredients if you want extra for drizzling. The sauce gets even stickier and more concentrated as it sits.
