  • 6 cups (about 180g) Rice Krispies cereal (original Kellogg’s recommended)
  • 4 cups (about 200g) mini marshmallows or 10 oz (280g) regular marshmallows
  • 3 tablespoons (45g) unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1 cup (120g) powdered sugar
  • 23 tablespoons (3045 ml) milk
  • Red and blue food coloring (gel or liquid)
  • Optional: a pinch of sea salt for the drizzle

Instructions

  1. Line a 9×13-inch baking pan with parchment paper or grease it lightly with butter or nonstick spray. (5 minutes)
  2. In a medium saucepan over low heat, melt 3 tablespoons (45g) of unsalted butter. Add 4 cups (200g) mini marshmallows (or 10 oz regular marshmallows) and stir continuously until smooth and gooey. (7-10 minutes)
  3. Remove the saucepan from heat and stir in 1 teaspoon of vanilla extract. (1 minute)
  4. Immediately pour the melted marshmallow mixture over 6 cups (180g) of Rice Krispies cereal in a large bowl. Using a rubber spatula, gently fold the mixture until all the cereal is evenly coated. (3-4 minutes)
  5. Transfer the mixture to the prepared pan. Use a buttered spatula or wax paper to press the mixture evenly and firmly into the pan without pressing too hard. (3-5 minutes)
  6. In two separate microwave-safe bowls, combine ½ cup (60g) powdered sugar with 1-1.5 tablespoons (15-22 ml) milk each. Stir until smooth. Add red food coloring gel to one bowl and blue to the other, mixing until vibrant colors form. Add a pinch of sea salt if desired. (5 minutes)
  7. Use a spoon or piping bag to drizzle the red and blue glaze in zigzags or stripes over the set treats. Work quickly; if the drizzle thickens, microwave in 10-second bursts to loosen it. (5 minutes)
  8. Allow the treats to cool completely at room temperature for about 30 minutes, or refrigerate for 15 minutes to set the drizzle. (30 minutes)
  9. Use a sharp knife to slice into squares, wiping the knife clean between cuts for neat edges. Serve immediately. (5 minutes)

Notes

Use low heat when melting marshmallows to avoid burning. Butter your spatula or hands to prevent sticking. Work quickly with the drizzle as it firms up fast. For gluten-free, use certified gluten-free Rice Krispies and substitute dairy and milk as needed. Chill treats briefly before cutting for cleaner slices.
