A quick and easy recipe for thick-cut bacon glazed with a sweet and smoky bourbon maple brown sugar glaze, perfect for brunch or entertaining.

  • 12 slices thick-cut bacon
  • 1/4 cup (60 ml) bourbon whiskey
  • 1/3 cup (80 ml) pure maple syrup
  • 1/4 cup (50 g) packed dark brown sugar
  • 1/2 teaspoon freshly ground black pepper
  • Optional: pinch of cayenne pepper or smoked paprika

Instructions

  1. Preheat your oven to 375°F (190°C). Line a rimmed baking sheet with aluminum foil and place a wire rack on top.
  2. Arrange the bacon slices evenly on the wire rack without overlapping.
  3. In a small saucepan over medium heat, combine bourbon, maple syrup, and brown sugar. Stir gently until sugar dissolves and mixture thickens slightly, about 5-7 minutes. Reduce heat to low once it bubbles.
  4. Add black pepper and optional cayenne or smoked paprika to the glaze, stir to combine, then remove from heat.
  5. Brush a generous layer of glaze over each bacon slice and place the baking sheet in the oven.
  6. Bake for 15 minutes, then flip each slice, brush with more glaze, and bake another 10-12 minutes until caramelized and crisp.
  7. Watch carefully to avoid burning; reduce heat if dark spots appear.
  8. Remove bacon from oven and let rest on the rack for a few minutes to set the glaze and crisp further.

Notes

Use thick-cut bacon for best results. Watch the glaze carefully to avoid burning. If glaze thickens too much while cooling, warm gently before brushing on the second side. Flip bacon carefully with tongs to keep glaze intact. For extra crispiness, broil 1-2 minutes after baking but watch closely.
