Instructions

  1. Prepare the caramelized onions: Heat 2 tablespoons olive oil in a skillet over medium-low heat. Add thinly sliced onions and a pinch of salt. Stir occasionally and cook slowly until golden brown and soft, about 20-25 minutes. Add 1 tablespoon balsamic vinegar in the last 5 minutes. Set aside to cool.
  2. Make the jalapeño relish: Finely chop jalapeños (remove seeds for less heat). Mix with apple cider vinegar and sugar in a small bowl. Let sit to meld flavors.
  3. Prepare the avocado spread: Mash ripe avocados with lime juice and a pinch of salt until smooth and creamy. Cover and refrigerate until ready to serve.
  4. Preheat grill to medium-high heat (around 400°F).
  5. Grill hot dogs for 8-10 minutes, turning every 2-3 minutes to ensure even cooking and nice charring. Look for a slight crisp on the casing and smoky aroma.
