Ingredients

Scale
  • 4 pork chops, bone-in or boneless, about 1-inch thick
  • 1/4 cup honey
  • 2 chipotle peppers in adobo, finely chopped or blended
  • 2 garlic cloves, minced
  • 1 tablespoon fresh lime juice
  • 1 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Optional: pinch of cumin or dash of cayenne pepper

Instructions

  1. Prepare the glaze: In a mixing bowl, combine 1/4 cup honey, 2 finely chopped chipotle peppers in adobo, 2 minced garlic cloves, 1 tablespoon fresh lime juice, 1 teaspoon smoked paprika, 1 tablespoon olive oil, and a pinch of salt and pepper. Stir until smooth. Adjust chipotle amount to suit your heat preference.
  2. Season the pork chops: Pat 4 pork chops dry with paper towels. Lightly brush both sides with olive oil, then season with salt and pepper. Let them rest at room temperature for about 10 minutes to take the chill off.
  3. Preheat the grill or pan: Heat your grill or grill pan to medium-high heat (around 400°F).
  4. Grill the pork chops: Place the chops on the grill and cook for 4-5 minutes per side without moving them too much to get good char and grill marks. Use tongs to flip gently.
  5. Apply the glaze: During the last 2 minutes of cooking, brush a generous layer of the honey chipotle glaze on both sides. Watch closely to avoid burning.
  6. Check doneness: Use a meat thermometer to check for an internal temperature of 145°F. Remove from heat once reached. Rest the chops for 5 minutes to let juices redistribute.
  7. Serve: Spoon any leftover glaze over the chops and garnish with fresh lime wedges or chopped cilantro if desired. Serve hot.

Notes

Brush the glaze on during the last 2 minutes of grilling to avoid burning the sugars in the honey. Let the pork chops rest after grilling to keep them juicy. Use a meat thermometer to ensure the internal temperature reaches 145°F. Keep a spray bottle of water handy to manage flare-ups. For milder heat, reduce chipotle peppers or substitute smoked paprika. The glaze can be prepared up to two days in advance and refrigerated.
