Instructions

  1. Pat the turkey drumsticks dry with paper towels to help the rub stick and the skin crisp up (approx. 5 minutes).
  2. In a mixing bowl, combine brown sugar, smoked paprika, garlic powder, onion powder, dried thyme, black pepper, cayenne pepper (if using), and salt. Stir until well blended.
  3. Lightly brush olive oil all over the drumsticks to lock in moisture and help the rub adhere evenly.
  4. Generously coat each drumstick with the spice mixture, rubbing it in with your hands to ensure full flavor penetration.
  5. Preheat your smoker or grill to a steady 225°F (107°C). Add soaked applewood chips to the coals or smoker box for a sweet-smoky aroma.
  6. Place the drumsticks on the smoker grate, skin side up. Close the lid and maintain temperature. Smoke for about 2 hours, checking every 30 minutes and rotating drumsticks halfway through for even cooking.
