A festive and easy-to-make dessert featuring a soft crust, tangy cream cheese frosting, and fresh fruit arranged like an American flag. Perfect for summer celebrations and light, refreshing treats.

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 1 cup powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 cup fresh strawberries, sliced
  • 1 cup fresh blueberries
  • 1 cup honeydew melon or green grapes, sliced
  • 1 cup cantaloupe, sliced

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking pan with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt. Add softened butter and blend until mixture looks like coarse crumbs.
  3. Add egg and vanilla extract, mixing until a soft dough forms. If too sticky, add a little more flour.
  4. Press the dough evenly into the prepared pan to about ¼ inch thickness.
  5. Bake the crust for 18-22 minutes until lightly golden around edges. Let cool completely on a wire rack.
  6. In a medium bowl, beat cream cheese and softened butter until smooth and fluffy.
  7. Gradually add powdered sugar, then mix in vanilla extract and lemon juice. Adjust sweetness if needed.
  8. Spread the frosting evenly over the cooled crust, leaving a small border around edges.
  9. Arrange the fruit on top to create the flag design: blueberries in a rectangle on upper left corner, alternate rows of sliced strawberries and honeydew melon or cantaloupe for red and white stripes.
  10. Chill the fruit pizza in the refrigerator for at least 30 minutes before serving.

Notes

Let the crust cool completely before frosting to prevent melting. Pat fruit dry if very juicy to avoid sogginess. Assemble fruit close to serving time to keep crust crisp. Use parchment paper for easy cleanup and neat slicing. For gluten-free, substitute flour with gluten-free blend; for dairy-free, use vegan cream cheese and butter alternatives.
