Fresh Grilled Watermelon Feta Salad with Easy Mint Lime Dressing

A refreshing summer salad featuring smoky grilled watermelon, tangy feta cheese, and a bright mint-lime dressing. Perfect for backyard gatherings and quick to prepare.

Ingredients

  • 4 cups watermelon, cut into 1-inch thick slices or cubes
  • 1 cup crumbled feta cheese (preferably Greek-style)
  • 1/4 cup chopped fresh mint leaves
  • Juice of 2 fresh limes (about 3 tablespoons)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon honey or agave syrup (optional)
  • Pinch of flaky sea salt
  • Freshly cracked black pepper to taste

Instructions

  1. Cut the watermelon into 1-inch thick slices, then into bite-sized cubes or wedges. Pat dry gently with paper towels to reduce moisture.
  2. Preheat grill or grill pan over medium-high heat until hot enough to sizzle.
  3. Grill watermelon pieces for 2-3 minutes per side until grill marks appear and watermelon softens slightly but holds shape. Grill in batches if needed.
  4. While watermelon cools slightly, whisk together lime juice, olive oil, honey or agave, salt, and pepper until emulsified. Adjust sweetness or acidity to taste.
  5. In a large bowl or serving platter, combine grilled watermelon, crumbled feta, and chopped mint. Drizzle with dressing and toss gently to coat evenly.
  6. Sprinkle extra flaky sea salt and freshly cracked pepper on top. Serve immediately or chill for 10-15 minutes if desired.

Notes

Pat watermelon dry before grilling to avoid flare-ups. Use medium-high heat to get good char marks without burning. Keep dressing separate until after grilling to prevent sogginess. Taste before adding extra salt due to feta’s saltiness. Can substitute avocado oil for olive oil or vegan feta for dairy-free version.
