  • 1.5 cups (150 g) granola (nutty with oats and honey, or gluten-free if needed)
  • 2 tablespoons (30 ml) honey or maple syrup (optional)
  • A handful of fresh mint leaves (optional)

Instructions

  1. Prep the Fruit (10 minutes): Wash strawberries and blueberries thoroughly. Slice strawberries into bite-sized pieces. Pat blueberries dry with paper towels to avoid watery parfaits.
  2. Blend the Yogurt Mixture (5 minutes): In a mixing bowl, combine Greek yogurt and cottage cheese (if using). Blend with a hand blender or food processor until smooth and creamy. Add honey or maple syrup if desired for sweetness. Taste and adjust.
  3. Set Up the Parfait Bar (5 minutes): Arrange the yogurt mixture in a large bowl or keep in the mixing bowl. Place bowls or jars for serving nearby. Put sliced strawberries, blueberries, and granola in separate dishes for easy access.
  4. Build Your Parfaits (time varies): Layer yogurt mixture, berries, and granola in glasses or jars. Repeat layers until reaching the top. Finish with a sprinkle of granola and a mint leaf for freshness.
  5. Serve Immediately or Chill: Parfaits are best fresh but can be refrigerated for up to 2 hours before serving. Keep granola separate if possible to maintain crunch.
