  • 1 cup strawberries, hulled and quartered
  • 1 kiwi, peeled and sliced
  • 1/2 cup blueberries
  • 1 cup mango, diced
  • 1 cup seedless grapes, halved
  • 1 tablespoon fresh mint leaves, chopped (optional)
  • 3 tablespoons honey
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest (optional)
  • Pinch of sea salt

Instructions

  1. Wash all fruits thoroughly. Peel and dice pineapple and mango into about 1-inch cubes. Hull and quarter strawberries, peel and slice kiwi, and halve grapes. Ensure pieces are roughly the same size.
  2. In a small bowl, whisk together honey, fresh lime juice, sea salt, and lime zest if using. Taste and adjust sweetness or tartness as desired.
  3. Pour the honey lime dressing over the fruit in a large mixing bowl. Gently fold the salad with a wooden or silicone spoon to coat all pieces evenly without bruising the fruit.
  4. If using, sprinkle chopped fresh mint leaves over the salad and gently toss once more.
  5. Chill the salad in the refrigerator for at least 15 minutes before serving to allow flavors to meld. Serve chilled but not ice-cold.
