Ingredients

  • Watermelon: Fresh, seedless, cut into 1-inch cubes
  • Feta Cheese: Crumbly block feta, about 4 ounces, cut into cubes similar in size to watermelon
  • Fresh Mint Leaves: About 20 whole leaves, washed and patted dry
  • Honey: Raw or wildflower honey, about 2 tablespoons for drizzling
  • Optional: Fresh lime juice (1 teaspoon) for honey drizzle
  • Optional: Crushed black pepper for sprinkling

Instructions

  1. Prepare the Ingredients (10 minutes): Rinse watermelon and mint leaves under cold water. Pat mint leaves dry. Cut watermelon into 1-inch cubes, removing seeds if needed. Cut feta into cubes roughly the same size.
  2. Assemble the Skewers (10 minutes): Thread a watermelon cube, followed by a mint leaf (folded if large), then a feta cube onto each skewer. Repeat until skewer is full or desired length is reached.
  3. Make the Honey Drizzle (2 minutes): Mix honey with optional lime juice in a small bowl until combined.
  4. Drizzle and Serve (3 minutes): Lay skewers on a serving platter and gently drizzle honey mixture over them. Optionally sprinkle crushed black pepper on top.
