A refreshing and easy summer appetizer combining sweet watermelon, creamy feta, fresh mint, and a tangy balsamic glaze. Perfect for entertaining or a light snack.

Ingredients

  • Seedless, firm watermelon, cut into 1-inch cubes
  • High-quality block feta cheese, cut into 1-inch cubes
  • Fresh mint leaves, washed and patted dry
  • Balsamic glaze (store-bought or homemade balsamic reduction)
  • Extra virgin olive oil (optional)
  • Freshly cracked black pepper (optional)

Instructions

  1. Cut the watermelon into 1-inch cubes, ensuring they are firm and hold their shape.
  2. Cut the feta cheese into cubes roughly the same size as the watermelon.
  3. Wash and pat dry whole fresh mint leaves.
  4. Thread one cube of watermelon, followed by a folded mint leaf, then a cube of feta onto each skewer. Repeat until the skewer is full or has 3-4 sets.
  5. Arrange the skewers neatly on a serving platter.
  6. Lightly drizzle balsamic glaze over the skewers using a spoon or squeeze bottle.
  7. Optionally, drizzle extra virgin olive oil and sprinkle freshly cracked black pepper on top for added flavor.

Notes

Assemble skewers close to serving time to keep watermelon crisp and mint fresh. Store components separately if preparing ahead. Use fresh mint leaves only. For a vegan version, substitute feta with marinated tofu. Optional toasted pine nuts add crunch. Balsamic glaze can be homemade by simmering balsamic vinegar until syrupy.
