A vibrant and easy-to-make peach salsa combining sweet peaches, spicy jalapeño, and fresh cilantro for a perfect balance of flavors. Ideal for chips, grilled meats, or tacos.

Ingredients

Scale
  • 3 medium fresh peaches, diced (ripe but firm)
  • 1 jalapeño pepper, seeded and finely chopped (adjust to taste)
  • 1/4 cup fresh cilantro leaves, chopped (packed)
  • 1 small red onion, finely diced
  • Juice of 12 fresh limes
  • 1/2 teaspoon salt, to taste
  • Pinch of ground black pepper (optional)
  • 1 tablespoon extra virgin olive oil (optional)

Instructions

  1. Wash and rinse peaches under cold water. Pat dry and dice into small, roughly 1/4-inch pieces.
  2. Slice the jalapeño in half lengthwise and remove seeds and membranes if less heat is desired. Finely chop the pepper.
  3. Finely dice the red onion and roughly chop the cilantro leaves.
  4. In a medium mixing bowl, combine diced peaches, jalapeño, red onion, and cilantro.
  5. Pour in the juice from 1 to 2 limes, starting with 1 and adding more to taste.
  6. Add 1/2 teaspoon salt and a pinch of black pepper. If using, drizzle 1 tablespoon of extra virgin olive oil.
  7. Stir gently to mix all ingredients without crushing the peaches.
  8. Cover the bowl and let the salsa rest at room temperature for 10 minutes to allow flavors to meld.
  9. Taste and adjust seasoning with more salt, lime juice, or jalapeño if desired before serving.

Notes

Use firm, ripe peaches to avoid mushy salsa. Adjust jalapeño heat gradually. Let salsa rest for 10 minutes before serving to enhance flavors. Best eaten fresh within 1-2 days. Store leftovers in an airtight container in the refrigerator. Add cilantro just before serving if prepping ahead.
