  • 1 cup (80g) rolled oats (old-fashioned)
  • 1/2 cup (120ml) milk (any kind)
  • 2 large eggs, at room temperature
  • 1/3 cup (80ml) ketchup, plus 1/4 cup (60ml) for glaze
  • 1 tablespoon Worcestershire sauce, plus 1 teaspoon for glaze
  • 1/2 medium yellow onion, finely diced (about 1/2 cup or 75g)
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional: finely chopped mushrooms, Dijon mustard, grated Parmesan cheese

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×5 inch loaf pan with parchment paper, leaving some overhang on the sides.
  2. In a small bowl, combine 1 cup (80g) of rolled oats with 1/2 cup (120ml) of milk. Stir and let sit for 5-10 minutes to soften.
  3. While oats soak, finely dice half a medium yellow onion and mince 2 cloves of garlic.
  4. In a large mixing bowl, whisk together 2 large eggs, 1/3 cup (80ml) of ketchup, and 1 tablespoon of Worcestershire sauce until well combined.
  5. Add the soaked oat mixture, diced onion, and minced garlic to the bowl. Stir until evenly distributed.
  6. Sprinkle in 1 teaspoon of Italian seasoning, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Stir briefly, then add 1.5 pounds (680g) of ground turkey. Mix gently with your hands or a spatula just until combined—do not overmix.
  7. Transfer the mixture to the prepared loaf pan and press gently into an even shape. In a small bowl, mix 1/4 cup (60ml) of ketchup with 1 teaspoon of Worcestershire sauce. Spread this glaze evenly over the top of the meatloaf.
  8. Place the loaf pan on a baking sheet and bake for 45-55 minutes, until the internal temperature reaches 165°F (74°C) when measured with a meat thermometer inserted into the center.
  9. Let the meatloaf rest in the pan for 10-15 minutes. Use the parchment paper to lift it out, transfer to a cutting board, and slice into 1-inch thick pieces.
  10. Serve warm with extra ketchup on the side if desired.
