These Healthy Jack-o-Lantern Stuffed Bell Peppers are a fun, festive, and nutritious fall dinner. Packed with lean ground turkey, quinoa, and hidden veggies, they are a crowd-pleaser that even pepper skeptics will love.

  • 4 large bell peppers (orange or yellow work best for the jack-o-lantern look, but red is fine too)
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • 1 lb lean ground turkey (93/7 works great; you can also use ground chicken or lean beef)
  • 1 cup cooked quinoa (I prefer tri-color for texture, but white is fine)
  • 1 small onion, finely diced (about 1 cup)
  • 2 cloves garlic, minced
  • 1 cup finely chopped mushrooms (they add a meaty texture and blend right in)
  • 1 cup canned diced tomatoes, drained (fire-roasted adds a nice smoky flavor)
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon ground cumin
  • ¼ teaspoon cayenne pepper (optional, for a little heat)
  • ½ cup shredded reduced-fat cheddar cheese (or dairy-free alternative)
  • ¼ cup chopped fresh parsley (plus more for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). While it heats, rinse and dry your bell peppers. Using a sharp knife, cut the top off each pepper (about ½ inch from the stem). Set the tops aside—they make great little lids. Carefully remove the seeds and white membranes from inside the peppers. Use a small spoon to scrape out any stubborn bits. Don’t throw away the pepper tops! You can chop them up and add them to the filling for extra veggie goodness.
  2. Place the hollowed peppers upright in your baking dish. Drizzle a little olive oil inside each one and season with a pinch of salt and pepper. Roast them in the oven for 10 minutes. This step is crucial—it starts the cooking process and prevents the peppers from becoming mushy later. They should be slightly softened but still hold their shape firmly. Remove them from the oven and set aside to cool slightly.
  3. While the peppers are roasting, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 3-4 minutes until it becomes translucent. Add the minced garlic and cook for another 30 seconds until fragrant. Add the ground turkey and break it apart with a wooden spoon. Cook for 5-6 minutes until it is no longer pink.
  4. Stir in the chopped mushrooms and cook for 3-4 minutes until they release their moisture and start to brown. Add the drained diced tomatoes, smoked paprika, oregano, cumin, and cayenne (if using). Stir everything together and let it simmer for 2 minutes. The mixture should look thick and fragrant, not watery.
  5. Remove the skillet from the heat. Stir in the cooked quinoa and ¼ cup of the shredded cheese. Mix until everything is well combined. Taste the filling and adjust seasoning with salt and pepper.
  6. Spoon the filling into each par-cooked pepper, packing it gently but firmly. Don’t overstuff, or the filling will spill out during baking. You want the filling to be level with the top of the pepper. Sprinkle the remaining ¼ cup of shredded cheese on top of each pepper.
  7. Using a small, sharp paring knife, carefully cut jack-o-lantern faces into the sides of the peppers. You can do classic triangle eyes and a jagged smile, or get creative with different shapes. Be careful not to cut all the way through the pepper—you want the faces to be ‘windows’ into the filling, not holes that let everything leak out.
  8. Place the stuffed peppers back in the baking dish. Add about ¼ cup of water to the bottom of the dish to create steam and prevent the peppers from drying out. Bake for 20-25 minutes, until the peppers are tender and the cheese is melted and bubbly.
  9. Remove the dish from the oven and let the peppers rest for 5 minutes. This allows the filling to set and makes them easier to handle. Garnish with fresh parsley and serve warm. You can place the pepper tops back on for a complete jack-o-lantern look!

Notes

Don’t overcook the peppers; the 10-minute par-cook is just right. Drain the diced tomatoes to avoid soggy filling. Use a timer when carving faces to avoid cutting too deep. Make extra filling for leftovers or freezing. For a vegetarian version, swap turkey for black beans and add extra quinoa.
