These light & airy forgotten meringue cookies with chocolate chips are crispy on the outside, slightly chewy in the middle, with melted chocolate in every bite. Made with just four simple ingredients, they’re gluten-free, low-fat, and perfect for late-night cravings.

Ingredients

Scale
  • 4 large egg whites, room temperature
  • 1 cup (200g) granulated sugar
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 1/2 cup (90g) mini chocolate chips
  • Optional: 1/4 teaspoon almond extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Separate your eggs while they’re cold, then let the whites come to room temperature (about 30 minutes).
  3. Add the cream of tartar to the egg whites and start whipping on medium speed until frothy and slightly opaque, about 1-2 minutes.
  4. Gradually add the sugar, about 1 tablespoon at a time, while continuing to whip on medium-high speed.
  5. Continue whipping until stiff peaks form, about 5-7 minutes with a stand mixer or 8-10 minutes with a hand mixer. The meringue should be glossy, white, and hold a stiff peak when you lift the whisk.
  6. Add the vanilla extract (and almond extract if using) and whip for another 30 seconds to incorporate.
  7. Gently fold in the mini chocolate chips using a rubber spatula until evenly distributed.
  8. Drop spoonfuls of meringue onto the prepared baking sheet, leaving about 1 inch between cookies.
  9. Place the baking sheet in the oven and immediately turn off the oven. Do not open the door.
  10. Leave the cookies in the oven for at least 6 hours or overnight.
  11. Remove from the oven and let cool completely on the baking sheet. They should peel easily off the parchment paper.

Notes

Humidity can affect the cookies; make on a dry day. Do not open the oven door during the ‘forgotten’ time. For best results, use room temperature egg whites and add sugar gradually. Store in an airtight container at room temperature for up to 2 weeks. Freeze for up to 3 months.
