These Light No-Bake Turkey Cake Pops are a quick and easy Thanksgiving treat made with angel food cake, Greek yogurt, and dark chocolate. They come together in about 30 minutes and are a lighter, festive dessert that kids and adults love.

Ingredients

Scale
  • 4 cups angel food cake crumbs (about half a store-bought cake or one homemade loaf)
  • 1/2 cup plain Greek yogurt (full-fat or 2%, such as Fage or Chobani)
  • 2 tablespoons honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1 cup dark chocolate chips (60% cacao, such as Ghirardelli)
  • 1 teaspoon coconut oil or vegetable oil
  • Candy corn (5-6 per pop)
  • Candy eyes
  • Orange candy melts or orange frosting (for beak)
  • Red candy melts or red frosting (for wattle)
  • Lollipop sticks (6-inch size)
  • Optional: 1 tablespoon unsweetened cocoa powder
  • Optional: Zest of one orange
  • Optional: 1/4 cup finely chopped dried cranberries

Instructions

  1. Prepare the cake crumbs: Crumble angel food cake into a large bowl using your hands until you have fine, even crumbs (about 4 cups).
  2. Mix the binding ingredients: In a small bowl, whisk together Greek yogurt, honey or maple syrup, vanilla extract, and a pinch of salt until smooth.
  3. Combine and shape: Pour yogurt mixture over cake crumbs and mix with a spatula or hands until evenly moistened. The mixture should hold together when squeezed. Take about 1.5 tablespoons of mixture, roll into a ball, then shape into an oval (turkey body). Place on parchment-lined baking sheet. Makes 12-14 pops.
  4. Chill the pops: Freeze for 15 minutes or refrigerate for 30 minutes until firm but not frozen solid.
  5. Melt the chocolate: Place dark chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second bursts, stirring between each, until smooth.
  6. Dip the pops: Dip tip of lollipop stick into melted chocolate, then insert halfway into pop. Dip entire pop into chocolate, coating completely. Gently tap stick on bowl edge to remove excess. Place upright in styrofoam block or rice-filled glass. Repeat with all pops.
  7. Add decorations: While chocolate is still wet, insert 5-6 candy corn pieces into back of each pop for tail feathers. Use toothpick or piping bag to add small dot of melted chocolate for eyes, then press on candy eyes. Add orange candy melt or frosting for beak and red for wattle. Let set completely, about 10 minutes at room temperature or 5 minutes in fridge.

Notes

Don’t overmix the cake crumb mixture to keep pops light. Use room temperature yogurt to avoid clumps. Chill pops adequately before dipping to prevent falling apart. Work in small batches when dipping chocolate. Have decorations ready before dipping as chocolate sets quickly. If chocolate is too thick, add more coconut oil. Pops taste even better the next day. Store in airtight container in refrigerator for up to 5 days. Freeze undipped balls for up to 3 months.
