  • 2 tablespoons olive oil

  • 1/4 teaspoon black pepper

  • 1 tablespoon unsalted butter (or vegan butter)
  • 1/2 teaspoon cinnamon
  • Pinch of cayenne pepper (optional)
  • Flaky sea salt for finishing
  • Fresh thyme or rosemary (optional garnish)
  • Toasted pecans or walnuts (optional garnish)
  • Pomegranate arils (optional garnish)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone mat.
  2. Wash the delicata squash thoroughly and pat dry. Trim off both ends (about 1/4 inch from each end).
  3. Slice the squash crosswise into 1/2-inch thick rings. Scoop out the seeds and stringy bits from the center of each ring.
  4. Place the squash rings in a large bowl. Drizzle with olive oil, add salt and pepper, and toss gently to coat evenly.
  5. Arrange the rings in a single layer on the prepared baking sheet, giving each ring space. Roast for 10 minutes.
  6. While the squash roasts, make the glaze: In a small saucepan over medium-low heat, combine maple syrup, butter, cinnamon, and cayenne (if using). Stir until butter is melted and mixture is well combined. Let simmer for about 1 minute, then remove from heat.
  7. Remove the baking sheet from the oven. Brush each squash ring generously with the maple glaze on both sides.
  8. Return the baking sheet to the oven and roast for another 5 to 7 minutes, until the squash is tender and edges are caramelized.
  9. Remove from oven and let cool on the baking sheet for 2 minutes. Transfer to a serving platter and sprinkle immediately with flaky sea salt. Add optional garnishes if desired. Serve warm or at room temperature.

Don’t skip the flaky salt at the end—it balances the sweetness. Watch the oven closely in the last few minutes to prevent burning. Cut rings evenly for uniform cooking. Use real maple syrup for best caramelization. Do not overcrowd the pan to ensure proper roasting.
