  • 1 ¾ cups (220 g) all-purpose flour, sifted
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¾ cup (150 g) granulated sugar
  • ½ cup (120 ml) vegetable oil (light olive oil or canola oil preferred)
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (170 g) semi-sweet or milk chocolate chips
  • ½ cup (60 g) chopped walnuts, toasted lightly

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your 9×5 inch loaf pan or line it with parchment paper.
  2. Grate the zucchini finely and squeeze out excess moisture using a clean kitchen towel. Set aside.
  3. In a large bowl, whisk together the sifted flour, baking soda, baking powder, salt, and cinnamon until evenly combined.
  4. In a separate bowl, beat the eggs with sugar until slightly fluffy. Add the vegetable oil and vanilla extract, mixing gently but thoroughly.
  5. Fold the grated zucchini into the wet mixture.
  6. Gradually add the dry ingredients to the wet ingredients, folding gently with a spatula just until combined. Avoid overmixing.
  7. Fold in the chocolate chips and chopped walnuts, reserving a small handful of each for topping if desired.
  8. Pour the batter into the prepared loaf pan and smooth the top. Sprinkle reserved chocolate chips and walnuts evenly on top.
  9. Bake for 55-65 minutes, starting to check at 50 minutes by inserting a toothpick in the center. It should come out clean or with a few moist crumbs. Tent with foil if browning too fast.
  10. Let the bread rest in the pan for 10 minutes, then transfer to a cooling rack to cool completely.
