These elegant, bubbly jello shots are made with sparkling white grape juice for a festive, non-alcoholic treat that everyone can enjoy. They have a soft, delicate texture and a beautiful, jewel-like appearance.

  • 3 cups (710 ml) sparkling white grape juice, chilled
  • 2 tablespoons (about 4 packets / 28 grams) unflavored gelatin
  • 1/2 cup (100 grams) granulated sugar
  • 1/2 cup (120 ml) cold water
  • Optional: edible glitter or gold luster dust for garnish
  • Optional: fresh berries or mint sprigs for garnish

Instructions

  1. Open the bottle of sparkling white grape juice and pour it into a large bowl or pitcher. Let it sit at room temperature for 20-30 minutes, stirring occasionally, until it goes completely flat (no more bubbles). This is crucial for a clear texture.
  2. Pour the 1/2 cup of cold water into a small saucepan. Sprinkle the 2 tablespoons of unflavored gelatin evenly over the surface. Do not stir. Let it sit for 5-10 minutes to bloom (it will become a thick, rubbery sheet).
  3. Place the saucepan over very low heat. Gently warm the mixture, whisking constantly, until the gelatin is completely dissolved and the liquid is clear (about 2-3 minutes). Do not let it boil.
  4. Remove the saucepan from heat. Add the 1/2 cup of sugar and whisk until completely dissolved. Slowly pour in the flat sparkling grape juice while whisking constantly until fully combined and smooth.
  5. Place a fine-mesh strainer over a large liquid measuring cup or bowl with a spout. Pour the gelatin mixture through the strainer to remove any undissolved bits for a clear finish.
  6. Place plastic shot cups (2 oz size) on a baking sheet. Carefully pour the mixture into each cup, filling almost to the top (leave about 1/8 inch for the lid). If using silicone molds, place them on the baking sheet first, then pour.
  7. Gently place the baking sheet in the refrigerator. Do not disturb for at least 4 hours, or overnight for best results.
  8. Once set, put lids on the cups. If using silicone molds, run a thin knife around the edge and gently pop them out. Garnish with edible glitter, fresh berries, or mint sprigs just before serving. Serve cold.

Notes

Let the sparkling juice go completely flat before using to avoid a foamy texture. Do not boil the gelatin mixture. For best clarity, strain the mixture before pouring. Let set for at least 4 hours, preferably overnight. Store in the refrigerator for up to 5 days; do not freeze.
