Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons whole milk or heavy cream
  • 1 1/2 cups fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • Optional: 1 tablespoon granulated sugar for macerating strawberries

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9-inch pizza pan thoroughly or line it with parchment paper for easy removal.
  2. In a large bowl, whisk the melted butter and granulated sugar together until combined but not grainy—about 1-2 minutes by hand or 30 seconds with an electric mixer.
  3. Crack in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. The batter should look glossy and thick.
  4. In a separate bowl, sift together the flour, cocoa powder, and salt. Gradually fold the dry ingredients into the wet mixture using a spatula. Be careful not to overmix—the batter should be fudgy and thick, not runny.
  5. Pour batter into the prepared pizza pan, spreading evenly and smoothing the top with an offset spatula to about 1/2 inch thickness.
  6. Bake for 25-30 minutes. Start checking at 25 minutes by inserting a toothpick in the center; it should come out with a few moist crumbs but not wet batter.
  7. Remove from oven and place pan on a cooling rack. Let cool completely, about 1 hour.
  8. In a mixing bowl, beat the softened cream cheese and butter together until smooth and creamy, about 2-3 minutes. Gradually add powdered sugar and vanilla, beating until fluffy. Add milk a tablespoon at a time until spreadable consistency is reached.
  9. Once cooled, spread the cream cheese frosting evenly over the brownie base using an offset spatula or knife.
  10. Arrange the fruit: use blueberries to create the top-left ‘blue field’ with stars, filling roughly a quarter of the pizza’s top-left area. Slice strawberries and arrange in horizontal stripes across the rest of the pizza to mimic the red stripes of the flag. Optionally macerate strawberries with sugar for 10 minutes before arranging.
  11. Chill the assembled brownie pizza for at least 30 minutes to allow the frosting to set before slicing into wedges and serving.

Notes

Ensure brownies are completely cooled before frosting to prevent melting. Grease or line pan well to avoid sticking. Do not overmix batter to keep brownies fudgy. Sift powdered sugar for smooth frosting. Pat fruit dry before arranging to avoid soggy frosting. Brownie base can be made a day ahead and stored wrapped at room temperature.
