  • 4 filet mignon steaks, about 6 ounces (170 grams) each, trimmed and patted dry
  • 8 slices thick-cut bacon (preferably Applewood smoked)
  • 1/2 cup unsalted butter (113 grams), softened
  • 1/3 cup crumbled blue cheese (about 50 grams), such as Roquefort or Gorgonzola
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon fresh parsley, finely chopped (optional)
  • Freshly ground black pepper to taste
  • 1 tablespoon olive oil
  • Kosher salt or sea salt for seasoning
  • Freshly ground black pepper for seasoning

Instructions

  1. Prepare the Blue Cheese Butter: In a mixing bowl, combine 1/2 cup softened unsalted butter with 1/3 cup crumbled blue cheese, 1 teaspoon lemon juice, 1 tablespoon finely chopped parsley, and a pinch of freshly ground black pepper. Mix gently until well blended but still a bit chunky. Transfer the mixture onto plastic wrap or parchment paper, roll into a log shape, and refrigerate for at least 30 minutes to firm up. This can be done a day ahead.
  2. Preheat the oven to 400°F (200°C).
  3. Season each 6-ounce filet mignon generously with kosher salt and black pepper.
  4. Wrap each steak twice with thick-cut bacon slices, securing with toothpicks if needed.
  5. Heat 1 tablespoon olive oil in a cast iron or heavy oven-safe skillet over medium-high heat until shimmering.
  6. Add the bacon-wrapped filets and sear for about 2 minutes per side, turning carefully with tongs, until the bacon is golden and crisp but not burnt. Press bacon gently if it curls.
  7. Transfer the skillet with the steaks directly into the preheated oven and cook for 6 to 8 minutes for medium-rare (130°F/54°C internal temperature), adjusting time for desired doneness.
  8. Remove the skillet from the oven and transfer steaks to a plate. Tent loosely with foil and let rest for 5 minutes to redistribute juices.
  9. Slice the chilled blue cheese butter into rounds and place a slice on each hot steak to melt.
  10. Remove toothpicks if used and serve immediately with your favorite sides.

Notes

Use thick-cut bacon to avoid shrinking and burning. Rest steaks after cooking to keep them juicy. Blue cheese butter can be made ahead and chilled. Adjust oven time for preferred doneness. For dairy-free, substitute blue cheese butter with garlic herb vegan butter.
