  • 2 tablespoons balsamic vinegar

  • About 1 pint vanilla ice cream
  • 1 teaspoon fresh thyme leaves (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Halve and pit the nectarines.
  3. In a mixing bowl, combine the balsamic vinegar, honey, olive oil, and a pinch of salt. Whisk until well blended.
  4. Toss the nectarine halves gently in the glaze mixture. If using fresh thyme, sprinkle it in now and toss again.
  5. Arrange the nectarines cut side up on a baking sheet, spaced evenly.
  6. Roast for 20 to 25 minutes, checking around 15 minutes for softness and caramelization.
  7. Remove from the oven and let cool for a few minutes.
  8. Serve each nectarine half with a generous scoop of vanilla ice cream.
