  • ¼ cup (50g) granulated sugar
  • 1 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon (optional)
  • 1 tbsp cornstarch
  • 1 egg, beaten
  • Coarse sugar, for sprinkling
  • Vanilla ice cream, for serving

Instructions

  1. Brown the butter in a heavy-bottomed skillet over medium heat, stirring constantly until golden brown and nutty, about 4 to 5 minutes. Remove from heat and cool to room temperature.
  2. In a large mixing bowl, whisk together flour, salt, and sugar. Add cooled brown butter and mix with a fork until dough resembles coarse crumbs.
  3. Add ice water, 1 tablespoon at a time, stirring gently until dough just holds together. Form into a disk, wrap in plastic, and chill for at least 30 minutes.
  4. In a bowl, combine sliced peaches, sugar, lemon juice, vanilla, cinnamon, and cornstarch. Toss gently to coat and let sit.
  5. Roll chilled dough on a lightly floured surface into a 12-inch circle about ⅛ inch thick. Transfer to a parchment-lined baking sheet.
  6. Spoon peach filling into center of dough, leaving a 2-inch border. Fold edges over fruit, pleating to create a rustic edge.
  7. Brush dough rim with beaten egg and sprinkle coarse sugar on top.
  8. Preheat oven to 400°F (200°C). Bake galette for 35-40 minutes until crust is golden and peaches are bubbling. Tent with foil if edges brown too quickly.
  9. Cool galette for 15 minutes to set filling. Serve warm topped with vanilla ice cream.
