Ingredients

Scale
  • 4 oz (115g) Brie or Camembert
  • 4 oz (115g) Aged Cheddar or Gouda
  • 2 oz (55g) Blue Cheese (like Gorgonzola or Roquefort)
  • 4 oz (115g) Prosciutto
  • 3 oz (85g) Salami (like Genoa or Soppressata)
  • Small bunch of red or green grapes
  • 1/4 cup (60ml) Honey or Fig Jam
  • 1/4 cup (30g) Mixed Nuts (like Marcona Almonds or Candied Pecans)
  • 1/4 cup (30g) Cornichons or Pickled Onions
  • 1 small Baguette or a box of crisp crackers
  • Fresh rosemary or thyme sprigs (optional)
  • Dried figs or apricots (optional)
  • Dark chocolate squares (optional)

Instructions

  1. Take cheeses out of fridge and let sit at room temperature for 15-20 minutes.
  2. Place small bowls for honey, jam, and olives on the board in a triangle pattern.
  3. Place brie whole on the board near the edge. Cut aged cheddar or gouda into thin wedges or small cubes and arrange in a fan shape. Crumble blue cheese into a small pile.
  4. Fold prosciutto slices into loose ribbons and place in a pile. Fold salami into quarters or leave whole, placing in a small overlapping pile next to prosciutto.
  5. Fill empty spaces with grapes in clusters, nuts in small piles, and cornichons or pickled onions near the meats.
  6. Slice baguette into thin, angled slices and arrange in a fanned pattern or stack in a basket. Place crackers in a neat pile if using.
  7. Drizzle honey over the brie. Sprinkle fresh rosemary sprigs around the board. Add dark chocolate squares in a small corner if desired.

Notes

Let cheese come to room temperature for best flavor. Don’t overcrowd the board; leave space between elements. Only put out what you’ll eat in the first hour for prosciutto to prevent drying. Use cornichons as a palate cleanser between bites.
