  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) brown sugar, packed
  • 2 large eggs, room temperature
  • 1 tsp pure vanilla extract
  • 3/4 cup (95g) all-purpose flour
  • 1/2 cup (50g) unsweetened cocoa powder
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 4 oz (115g) cream cheese, softened
  • 1/4 cup (57g) unsalted butter, softened
  • 1 to 1 1/2 cups (120-180g) powdered sugar, sifted
  • 1/2 tsp pure vanilla extract
  • 12 tbsp (1530 ml) milk or heavy cream
  • Red and blue food coloring (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9- or 10-inch round pizza pan or springform pan.
  2. In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until combined.
  3. Add eggs one at a time, beating well after each addition. Stir in vanilla extract until mixture is glossy and thick.
  4. In a separate bowl, sift together flour, cocoa powder, salt, and baking powder.
  5. Gradually fold dry ingredients into wet mixture using a rubber spatula. Stop mixing once no streaks of flour remain.
  6. Pour and spread batter evenly into prepared pan, smoothing the top to about 1/2 inch thickness.
  7. Bake for 20-25 minutes, checking at 20 minutes with a toothpick; it should come out with a few moist crumbs but no wet batter.
  8. Cool brownie completely on a wire rack, at least 1 hour, before frosting.
  9. Beat cream cheese and softened butter together until smooth and fluffy.
  10. Gradually add powdered sugar, then vanilla extract. Add milk or cream 1 tablespoon at a time if frosting is too thick.
  11. Divide frosting into three bowls; leave one white, add red food coloring to second, and blue to third. Stir until colors are even.
  12. Fill pastry bags or plastic bags with each color and pipe stars over the brownie surface in a festive pattern.
  13. Slice into wedges and serve with milk or iced tea.

Notes

Use melted butter for rich fudginess. Do not overmix batter to avoid cakey brownies. Cool brownie completely before frosting to prevent melting. Use gel food coloring for vibrant frosting colors. Frosting can be refrigerated briefly if interrupted during piping.
