A quick and easy strawberry shortcake trifle for two, made with simple ingredients like pound cake, fresh strawberries, and whipped cream. Perfect for date night or last-minute desserts, this no-bake dessert comes together in under 15 minutes and features perfectly balanced layers of soft cake, juicy berries, and silky cream.

Ingredients

Scale
  • 1 cup fresh strawberries, hulled and sliced (about 5–6 medium berries)
  • 1 tablespoon granulated sugar
  • 1 teaspoon fresh lemon juice
  • 1/2 cup heavy whipping cream, cold
  • 1 tablespoon powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup store-bought pound cake, cut into 1/2-inch cubes
  • 1 tablespoon strawberry jam or preserves (optional)

Instructions

  1. Macerate the strawberries: In a medium bowl, combine the sliced strawberries, granulated sugar, and lemon juice. Gently toss together and let sit for about 10 minutes while you prepare the other components.
  2. Whip the cream: Pour the cold heavy cream into a chilled mixing bowl. Add the powdered sugar and vanilla extract. Using a hand mixer on medium-high speed, whip until soft peaks form, about 2-3 minutes.
  3. Prepare the cake: Cut the pound cake into 1/2-inch cubes. If desired, spread a thin layer of strawberry jam on the cake cubes for extra flavor.
  4. Layer the trifle: In two serving dishes, start with a layer of cake cubes at the bottom (about 1/3 of the cake per dish). Spoon about 1 tablespoon of the strawberry syrup from the macerating bowl over the cake.
  5. Add the strawberry layer: Spoon about 1/3 of the macerated strawberries over the cake layer, including some of the syrup.
  6. Add the cream layer: Dollop about 1/3 of the whipped cream over the strawberries and spread gently to the edges.
  7. Repeat the layers: Add another layer of cake, a little more syrup, the remaining strawberries, and another layer of cream. You should have enough for two complete layers in each dish.
  8. Finish and chill: Top with a final swirl of cream and a strawberry slice for decoration. Cover and refrigerate for at least 30 minutes before serving for best flavor.

Notes

Chill your bowl and beaters before whipping cream for best results. Don’t skip macerating the strawberries—the syrup is key for soaking into the cake. For a quicker option, microwave strawberries with sugar for 30 seconds. The trifle can be assembled up to 24 hours in advance; wait to add the top cream layer until just before serving for the prettiest presentation.
