A quick and easy snack that transforms fresh pumpkin seeds into a crunchy, zesty treat with chili and lime, ready in under 30 minutes.

Ingredients

Scale
  • 1 ½ cups fresh pumpkin seeds
  • 4 cups water
  • 1 teaspoon salt (plus more for boiling)
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon garlic powder
  • 1 large lime (zest and juice)
  • ¼ teaspoon cumin (optional)
  • Flaky salt (for finishing)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Rinse pumpkin seeds in a colander under cool water, removing large pumpkin strings.
  3. In a medium saucepan, bring 4 cups water and 1 teaspoon salt to a boil. Add seeds and boil for exactly 10 minutes.
  4. Drain seeds and spread on a clean kitchen towel or paper towels. Pat dry until damp, not wet.
  5. In a small bowl, mix chili powder, cayenne, garlic powder, and optional cumin. Zest lime directly into the spice mix.
  6. In a mixing bowl, combine dried seeds, olive oil, and spice-lime zest mixture. Toss until evenly coated.
  7. Spread seeds in a single layer on a rimmed baking sheet lined with parchment paper.
  8. Roast for 12-15 minutes, stirring at the 6-minute mark, until golden brown and fragrant.
  9. Remove from oven and immediately squeeze juice of half a lime over seeds. Sprinkle with flaky salt and toss gently.
  10. Let cool completely on baking sheet for at least 10 minutes before serving.

Notes

Boiling seeds is essential for crunch. Do not skip. Watch oven closely as seeds can burn quickly. Let cool completely for best texture. Store in airtight container at room temperature for up to 2 weeks.
