A quick and refreshing holiday mocktail combining tart pomegranate juice with earthy rosemary and fizzy club soda. Ready in under 5 minutes, it’s perfect for busy weeknights or festive gatherings.

Ingredients

Scale
  • 4 cups (960 ml) pomegranate juice (100% pure, such as POM Wonderful)
  • 4–6 fresh rosemary sprigs, plus extra for garnish
  • 2 cups (480 ml) club soda or sparkling water, chilled
  • ½ cup (85 g) pomegranate arils (seeds), for garnish
  • 2 tablespoons (30 ml) simple syrup or honey (optional, for sweetness)
  • Ice cubes, as needed
  • Optional garnish: orange slices, star anise, or cinnamon sticks

Instructions

  1. Prepare the rosemary: Gently roll 4-6 fresh rosemary sprigs between your palms for about 10 seconds each to release oils. Trim if needed to fit in the pitcher.
  2. Add the pomegranate juice: Pour 4 cups (960 ml) pomegranate juice into a large pitcher. If using simple syrup or honey, add and stir until dissolved.
  3. Add the rosemary sprigs: Drop the bruised rosemary sprigs into the pitcher and gently press them down with a spoon. Let steep for 1-2 minutes.
  4. Chill the mixture (optional): Refrigerate the pitcher for 15-30 minutes to deepen the rosemary flavor.
  5. Fill glasses with ice: Fill each serving glass about ¾ full with ice cubes.
  6. Pour the juice mixture: Remove rosemary sprigs or leave them in for presentation. Pour the pomegranate mixture into each glass, filling about ⅔ full.
  7. Top with club soda: Slowly pour chilled club soda into each glass, filling to the top. Stir gently with a spoon or rosemary sprig.
  8. Garnish and serve: Drop a few pomegranate arils into each glass. Add a fresh rosemary sprig and optional garnishes (orange slices, star anise). Serve immediately.

Notes

For best results, chill all ingredients beforehand. Add club soda just before serving to maintain fizz. The pomegranate-rosemary mixture (without club soda) can be stored in the refrigerator for up to 3 days. For a stronger rosemary flavor, let the sprigs steep longer or overnight. To make rosemary ice cubes, freeze small rosemary sprigs in water.
