  • 1/4 teaspoon salt
  • 1 cup pecans or walnuts, toasted and roughly chopped (optional)
  • 1/2 cup dried cranberries or raisins (optional)
  • 1/4 cup mini chocolate chips (optional)
  • 1/2 cup shredded coconut, unsweetened (optional)

Instructions

  1. Measure out 9 cups of Rice Chex into a large microwave-safe bowl. Do not pack it down.
  2. In a separate microwave-safe bowl, melt 1/2 cup butter in the microwave (30 seconds, then 15-second intervals until melted).
  3. To the melted butter, add 1/2 cup maple syrup, 1/4 cup brown sugar, 1 teaspoon cinnamon, 1 teaspoon vanilla, and 1/4 teaspoon salt. Whisk until smooth.
  4. Slowly drizzle the maple-butter mixture over the cereal while stirring gently with a rubber spatula to coat evenly.
  5. Microwave the bowl on high for 2 minutes. Remove and stir gently. Microwave for 1 more minute, stir again, then microwave for another 1 minute (total 4 minutes).
  6. After the last interval, the coating should look glossy and slightly bubbly. If dry, microwave an additional 30 seconds.
  7. Immediately pour the hot Chex mix onto a parchment-lined baking sheet and spread into a single layer.
  8. Allow the mix to cool completely without touching it (about 10-15 minutes).
  9. Once cool, break any large clusters into bite-sized pieces. If adding chocolate chips or dried fruit, sprinkle them on now and toss gently.

Notes

For best results, use name-brand Chex cereal and Grade A Dark Amber maple syrup. If your microwave runs hot, reduce cooking time by 30 seconds per interval. Let the mix cool completely for maximum crunch. Store in an airtight container at room temperature for up to 2 weeks. To revive crunch, reheat in a 250°F oven for 5 minutes.
