  • 1 cup fresh strawberries, hulled and sliced (or frozen, thawed)
  • 2 tablespoons granulated sugar (adjust to taste)
  • 2 tablespoons freshly squeezed lemon juice
  • 1/4 cup vodka or white rum (optional for the boozy kick)
  • 1 cup coconut milk (full-fat or light)
  • 2 tablespoons honey or agave syrup
  • 1 teaspoon vanilla extract
  • 2 tablespoons cream or Greek yogurt (optional)
  • 2 tablespoons clear liquor like coconut rum or vodka (optional)
  • 1 cup fresh blueberries (or frozen, thawed)
  • 2 tablespoons sugar
  • 2 tablespoons lemon juice
  • 1/4 cup blue curaçao or a mix of vodka with blue food coloring (optional)
  • Popsicle molds
  • Popsicle sticks

Instructions

  1. Prepare the Red Layer: In a blender, combine strawberries, sugar, lemon juice, and vodka or rum if using. Blend until smooth, about 30 seconds. Taste and adjust sweetness if needed. Pour the mixture into the popsicle molds, filling each about one-third full. Freeze for at least 1 hour, or until firm to the touch.
  2. Make the White Layer: Whisk together coconut milk, honey, vanilla extract, cream or Greek yogurt, and liquor if using, until smooth. Pour this gently over the frozen red layer, filling molds up to two-thirds. Freeze again for at least 1 hour.
  3. Create the Blue Layer: Blend blueberries, sugar, lemon juice, and blue curaçao or vodka until smooth. Pour over the white layer, filling the molds to the top. Insert popsicle sticks carefully, then freeze for a minimum of 4 hours or overnight to fully set.
  4. Unmold and Serve: To remove, run warm water over the outside of the molds for 10-20 seconds. Gently pull the popsicles free. Serve immediately for best texture.
  5. Cleanup: Rinse your blender and molds right away to prevent sticky buildup. Store any leftover popsicles in an airtight container in the freezer.

Notes

Pour each layer slowly and close to the frozen surface to avoid mixing colors. Freeze each layer for at least 1 hour before adding the next, with a final freeze of 4 hours or overnight. Use organic berries for best flavor. For non-alcoholic versions, replace liquor with extra fruit juice. Moderate alcohol quantity to avoid slushy popsicles. Silicone molds recommended for easy unmolding.
