A bright, cooling, and easy-to-make summer cocktail blending fresh strawberries, lemon juice, vodka, and simple syrup into a smooth icy slush.

  • 2 cups fresh strawberries, hulled and halved
  • 4 large fresh lemons, juiced and zested
  • 1 cup vodka (240 ml)
  • 1/2 cup simple syrup (120 ml)
  • 3 cups ice cubes (about 450 grams)
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Wash and hull the strawberries, then halve them if large. Juice the lemons, removing any seeds, and zest one lemon for extra flavor if desired. Measure out vodka and simple syrup.
  2. Add strawberries, lemon juice, vodka, simple syrup, and ice cubes into a high-speed blender. Secure the lid tightly.
  3. Start blending on low speed and gradually increase to high. Blend until the mixture is smooth but still icy, resembling a frozen slush. If the mixture is too thick, add a splash of cold water or more lemon juice to loosen it up.
  4. Taste and adjust sweetness or tartness by adding more simple syrup or lemon juice as needed. Blend briefly again if you add anything.
  5. Pour the slush into chilled glasses immediately. Garnish with fresh mint leaves or a lemon wheel if desired.

Notes

Serve immediately for best icy texture. Chill glasses beforehand for extra refreshment. If prepping ahead, blend all ingredients except ice and refrigerate up to 4 hours; add ice and blend again before serving. Use fresh, ripe strawberries for best flavor. Avoid overblending to prevent melting ice. Pulse ice first if blender struggles.
