This small-batch habanero peach hot sauce is sweet, fiery, and ridiculously easy to make. With just five main ingredients and 25 minutes, you’ll have a silky, golden-orange sauce that’s perfect on eggs, tacos, or straight off a spoon.

  • 3 medium ripe but firm peaches (about 2 cups chopped)
  • 23 medium habanero peppers (seeds removed for less heat, or leave some in for more)
  • ½ cup white vinegar
  • 2 cloves garlic, smashed
  • ½ teaspoon fine sea salt, plus more to taste
  • 1 tablespoon granulated sugar or honey (optional, if peaches aren’t sweet enough)
  • 1 tablespoon fresh lime juice (optional, for brightness)

Instructions

  1. Prep the peaches: Bring a small pot of water to a boil. Score a small ‘X’ on the bottom of each peach. Drop peaches into boiling water for 30 seconds, then transfer to a bowl of ice water. Peel off skins, remove pits, and roughly chop the flesh into chunks (about 2 cups).
  2. Handle the habaneros: Wearing rubber gloves, slice habaneros in half lengthwise. For less heat, scrape out seeds and white membranes; for more heat, leave them in. Finely chop the peppers.
  3. Smash the garlic: Place garlic cloves on a cutting board, lay the flat side of a knife on top, and whack with your palm to crack open. Remove skins and roughly chop.
  4. Simmer everything together: In a small saucepan, combine chopped peaches, chopped habaneros, smashed garlic, white vinegar, and salt. Bring to a gentle boil over medium-high heat, then reduce heat to low and simmer uncovered for 12-15 minutes, until peaches are very soft and liquid has reduced slightly. Stir occasionally.
  5. Blend until smooth: Carefully transfer the hot mixture to a blender. Let cool for 1-2 minutes. Start on low speed and gradually increase to high. Blend for 30-60 seconds until completely smooth. If too thick, add water 1 tablespoon at a time until desired consistency.
  6. Taste and adjust: Taste the sauce. If needed, stir in sugar or honey for sweetness, more salt for seasoning, or a pinch of cayenne for extra heat. Add lime juice if desired.
  7. Strain (optional): For ultra-smooth sauce, pour through a fine-mesh strainer, pressing on solids with a spatula. Skip for more texture.
  8. Bottle and cool: Pour hot sauce into a clean glass jar or bottle. Let cool to room temperature before sealing and refrigerating. Sauce will thicken slightly as it cools.

Notes

Wear gloves when handling habaneros to avoid capsaicin burns. The flavor improves dramatically after resting overnight in the fridge. For a milder sauce, use only 1 habanero and remove all seeds. For more heat, leave seeds in or add a pinch of cayenne. The sauce can be frozen in ice cube trays for up to 3 months.
