Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, combine the yellow cake mix and pumpkin pie spice. Stir until the spice is evenly distributed.
  3. Add the pumpkin puree and stir until a soft, cohesive dough forms. Do not overmix.
  4. In a small bowl, whisk together the granulated sugar and ground cinnamon.
  5. Using a cookie scoop or two spoons, portion out rounded tablespoons of dough. Roll each portion into a smooth ball between your palms.
  6. Roll each dough ball in the cinnamon sugar mixture until fully coated. Place on prepared baking sheets, spacing about 2 inches apart.
